Quick and Easy Paleo Skillet Frittata Recipe

A paleo frittata is full of flavor, easy to make and delicious.

However, what is a frittata? A quick definition of a frittata describes it as an open-faced omelet that has the ingredients combined with the eggs instead of the usual, where the eggs generally fold over the top of the other ingredients such as vegetables, meat or cheese.

A skillet frittata is the foundation meal for many paleo enthusiasts. With so many recipe variations, you can find a different paleo frittata recipe for every day of the month. However, before you experiment with something like salmon frittata, it is good to have a basic paleo skillet frittata recipe to start with and then go from there.

This simple paleo recipe is easy to make and gives you the room to make it your own. I hope you enjoy. :)

Ingredients

1/2 cup sausage*, crumbled 1/2 cup red bell pepper, diced
1/2 cup mushrooms, sliced 1/2 cup green bell pepper, diced
1 cup broccoli crowns,chopped salt and pepper (to taste)
4-6 large eggs 1/4 tsp thyme
1/2 yellow onion, diced 1/4 tsp paprika

* You can substitute with 8 bacon strips. Yes, bacon! :)

Just like the cast iron chicken pot pie recipe, these ingredients cover the essentials for an easy paleo frittata recipe. However, feel free to add more ingredients (or take some away) to make it more yummy for you. :)

Preparation

As usual, preheat your oven to 350 degrees. Then on your stovetop place your cast-iron skillet over medium heat and coat with cooking oil or butter.

Whisk your eggs together in a bowl with the salt, pepper and paprika, set aside. You want them nice and fluffy.

Besides the eggs, meat tops the list of ingredients for a good frittata recipe. Dice your bacon to smaller than bite-sized pieces and if you choose sausage, make sure to crumble it. This helps to make sure the meat spread evenly throughout. However, the important thing here is that the meat is fully cooked. Before adding any other ingredients, cook the meat completely. If you are using bacon, make sure it is crispy.

After the meat, toss into your skillet the diced bell peppers, mushrooms and onions. Stir everything together for about one minute. Next, add your broccoli and cook for about another minute or so.

After those steps, you add the eggs pouring them over the meat and vegetables in the skillet. Cover and cook for roughly 5 to 6 minutes. The objective here is to allow the bottom to set before placing the frittata into the oven.

Lastly, take the lid off the frittata and place in the oven for about 20 minutes. You can start checking at about 15 minutes though to see if it is finished. You know the frittata is ready when you can stick and knife or a toothpick through it and it comes out clean and without egg. Enjoy.
